This coffee is the result of pursuing a singular flavor.
Panama is typically known for producing the Gesha variety; bright, floral, and incredibly vivid. This coffee, though, is a blend of humbler origins grown in Boquete, Panama, at the Los Cantares Estate. Comprised of high-altitude Caturra and Catuaí varieties, it has some of the most beautiful and uniform beans I have ever seen.
I've roasted this to highlight the typical Caturra flavor, which I believe to be caramelly, strong, and slightly bitter. It's the kind of thing that leaves you wanting more at the end of each sip; flavors that could represent "coffee" as a whole in American culture. Additionally, and perhaps due to the terroir of the region, there's a sublime nuttiness, hints of lemon peel and ripe mango, a creamy mouthfeel.
This coffee makes an amazing espresso, and it's designed to be a little more accessible than some light-roast, single origin offerings from Albatross. As such, it's taken a bit darker. It is also delicious as a less fussy, no-frills pourover (if you're into that kind of thing).
