Balanced, rich, and unpretentious, this Red Catuai from Brazil has a classic character that makes it a joy to drink. A silky body and lingering salted caramel aftertaste are its main strengths. There is a distinct transition from dark chocolate & prune flavors washing over the tongue to the settling of caramel and nuts deeper in the palate. Everything seems baked-in and cohesive; the complexity and depth of flavor will give you something to ponder, sip after sip.
This naturally processed coffee hails from Minas Gerais, Brazil. Paulo Alexandre Fernandes is a second-generation coffee farmer who decided to reinvigorate the efforts of his family's small farm into producing excellent coffee. With only 4 hectares, they have created an elevated offering of classic Brazilian coffee.
It is outstanding as a pourover, with a wide range of variables to tease out different flavors, and as a balanced espresso with a surprising amount of red fruit in the cup.
Recommended rest time: 4-5 days from roast date.
